Banana, Oat & Chia Loaf

I have an easy and delicious recipe that I can't wait to share with you... It's high protein and full of fibre but still tastes amazing!! Having received the whole family tick of approval, this loaf is such an excellent all rounder - enjoy it at any time of day for the feeling of indulgence with zero guilt. I love it fresh and it keeps well for about 4 days. To mix it up toast your slice in a sandwhich press and top with a smear of butter. The perfect companion for a hot cup of tea!
INGREDIENTS: 1 1/2 cups (225g) plain flour 1 tbs baking powder
1/2 cup (110g) brown sugar 1/2 cup (60g) oat bran
1/3 cup (35g) sunflower seeds
2 tbs chia seeds
160 g tub high protein vanilla yoghurt (YoPro)
2 tbs milk (dairy or plant based)
2 large eggs
2 ripe mashed bananas or 240g stewed fruit of your choice (apple is delicious)
1 tbs pumpkin seed kernels (pepitas)
METHOD:
Preheat oven to 160 degrees fan forced.
Line a 21 x 11 cm with baking paper.
Mix dry ingredients (except pumpkin seed kernels) together in a mixing bowl.
In a seperate bowl beat eggs, vanilla yoghurt, milk and fruit together.
Add wet ingredients to dry and mix until just combined.
Pour in to prepared tin, smooth top and sprinkle with pumpkin seed kernals.
Bake in oven for 50 minutes or until a skewer inserted comes out clean.
Allow to rest for 5 minutes before turning out on to a cooling rack.
Once cooled, cut into 1 cm slices and serve.
