(KFC) Krispy Fried Chicken

Succulent crispy fried chicken with a side of coleslaw…. mmmm.   Perfect for a casual meal with family and friends or a picnic in the park.


Whilst the take away chain KFC keep their secret herbs and spices a trade secret I think this recipe comes pretty close to taste and is so much better for you!  This particular KFC seasoning recipe is a low carb version however if low carb is not your thing I’ve also included easy substitutions that makes it even more like the original!

Krispy Fried Chicken Seasoning


Ingredients:


2 cups whole almonds or almond meal 0.5 tsp cayenne pepper 2 tsp salt 1 tsp garlic powder 1 tsp dried oregano 1.5 tsp paprika (mild/sweet) 1 tsp dried oregano 1 tsp dried rosemary 1 tsp dried thyme 1 tsp dried basil 1 tsp onion powder 1 tsp yellow mustard seeds


TM Method:


Add all ingredients except the almonds into the TM bowl and mill at spd 9 for 8 secs.  You are wanting a fine powder with the flavours well combined.


Add the almonds to the seasonings in the TM bowl and mill, spd 9 for 10 secs, MC on.


Taste your seasoning, make any adjustments for your personal taste.  When satisfied, pour into the bowl you plan on using to coat your chicken.


Traditional Method:


Add all ingredients except the almond meal into a coffee grinder or bullet type mixer and mill seasoning until a fine powder is achieved.


Combine almond meal and seasoning in a bowl.  


Ensure you mix well so the flavour is evenly distributed.



Coating and Cooking your Chicken


Crack 1 egg into a bowl, add a dash of milk and whisk with a fork to combine well.  This forms the glue to stick the KFC seasoning onto the chicken.


Dip your chicken into the egg wash briefly, then place into the seasoning bowl and coat well.  If you want a super crispy coating, repeat this process.


Pour enough oil into your pan so that it will come about 1/4 of the way up the side of your chicken strips.  Pan fry your chicken strips in a medium hot pan (not too hot as you don’t want to burn your coating) until cooked through.


If you find that your pan was too hot and the coating is starting to burn, ensure both sides have a coating of oil then pop in the oven at 160 degrees to finish cooking the meat.



Notes from Gracious Goodness :

Time Saving Tip - this recipe makes enough for 2 batches of about 8 large chicken strips (700g) or 8 chicken drumsticks. Before crumbing your chicken, place half your seasoning mixture into a zip lock bag, label and freeze for next time you want a tasty KFC meal in a hurry.  No need to thaw, use seasoning straight from freezer.


Don't want this low carb or you want it nut free? Simply substitute the almond meal for plain flour and you'll get a lovely crispy chicken coating.  This is the most authentic version of the commercial KFC. You could also sub the almond meal with bread crumbs for a traditional “schnitzel” coating that packs a punch. If not using a nut meal base then its fine to store excess seasoning in an airtight container in the pantry rather than the pantry.
